Perisno, there is some Lord of the Rings one I'e heard anons talk very highly of. 
Prophecy of Pendor is high quality but can be gay for a few reasons. 
Sengoku or whatever it's called where you unify japan can be fun. 

When the fuck is bannerlord getting the super overhauls? I want to see them utilize the new skeletons to make actual dragon mounts instead of the janky ones.

The Last Days of the Third Age, or TLD. Does away with many of the annoying vanilla M&B mechanics, like the lame ass quests, also prevents you from winning the campaign by taking all the castles by yourself. One of the best mods for the game. Total orc death.

I've also enjoyed Floris Expanded, adds amazing custom armors and weapons, comes in a bundle with Diplomacy, Freelancer and other overhaul mods for fief and army management. The new unit tree is a mixed bag. Neutral mercenaries are great, modeled after the Teutons.

I always found dickplomacy to be hilarious because it's a sex mod but the author of the mod also decided he liked mount and blade and it has a bunch of other tackons like diplomacy, some floris shit, and a few other quality of life additions.

None of the single player mods make the game not a grindy thoughtless slogfest, but Perisno comes the closest.
Warband multiplayer is dead, the greatest mod of all was called Persistent World (later Persistent Kingdoms) which turned the game into a small faction-based MMO where you could fight enemy player kingdoms, siege their castles and take their land. It was fantastic.
Bannerlord actually has this mod, it's titled Persistent Empires and it looks just as fun as before, if not more.

I really appreciated Solid & Shade for non-warband M&B. It's made by one neo-pagan emo larper who loves the works of EGP and is a bit of a sperg, but he made a lot of custom systems and art assets and is generally well put-togethr. It's a very unique experience for all that and I recommend anyone who likes modded M&B to try out.

Another classic yet very obscure M&B mod is The Wedding Dance. It got deleted by its creator and is a bit hard to find, and also comes with a CTD bug based on sound card incompatibilites, but it's another very unique M&B mod.

Detailed Character Creation+Designer225's Miscellaneous Patches lets you be the little girl, so it's clearly the best.
