Morrowind has OpenMW, Oblivion actually needed a remake because it was stuck on a dogshit unstable 2006 engine. There's a reason the mod community for it is dead.
It remains to be seen if they've actually fixed anything that matters or if they just slapped a UE5  layer on top.
I've watched some gameplay and it looks like the combat hasn't been reworked into something proper which is a shame. Dark Messiah tier combat is the only thing that could have made this remaster worth it for me, I don't care about the generic unreal engine veneer.

Because it's much easier than the alternative. Before the advent of these commercial all-in-one engines like UE, Unity, etc. most "game engines" were actually a collection of inhouse tools made by the developers themselves combined with the occasional external tool like a 3D rendering API so you don't have to hire an autistic genius who can create a 3D rendering engine from scratch. That way of working requires a lot of skill and knowledge and is generally difficult. 
Engines like UE have been massively streamlining this process for years now and basically take care of everything imaginable to the point even 3rd world jeets can make very rudimentary asset flip games in the span of a week.

Unreal 5 is still problematic in the sense that you need a super computer to run some games made in it. They are really unoptimized. Same was the case with Unity, because most people using it had no idea how to optimize in it. Premade engines and libraries being the home of slop like most Nukige really doesn't help the reputation of those engines.

From how quickly it was cracked and the fact it works offline I don't think it actually does, I think they just copypasted the EULA from TESO or something and didn't delete the irrelevant parts.

I wish people would finally stop using this term. Or actually read Lord of the Rings and SIlmarillion at an age older than 13. If Tolkien's works are "generic", it's because they defined the "genera", but the man was doing everything in painstakingly autistic way. "LOTR Fantasy" would have historically accurate armor, albeit possibly anachronistic, and flawed, vulnerable heroes. Also, no pastiche of religion that every D&D writer has used for their pea-brained criticism.

I like LotR, I read all the books, SIlmarillion and The Hobbit, and watched the movies except the Hobbit movies, they are cultural landmarks, but I don't have any other word to describe Oblivion aesthetics other than a derivative safe interpretation of the LotR movies, generic lotr fantasy, if you want to I could call it a generic dragonlance inspired look but even dragonlance had a little bit of more edginess than Oblivion.
