You can't understand it because you're looking at it from a perspective of a video game. It has no end, it has no objectives, so what's the point? You might be correct, in that these two might not be as narratively or mechanically enjoyable as some more structured, orthodox RPGs. However, the enjoyment comes from the roleplaying aspect, not leveling up or making builds as much as the experience aspect of it. In these two games, you can become pretty much anyone you want, the depth of what you can do in Warband(and Bannerlord) is especially impressive and Kenshi has it's benefits too. You create your own story, you set your own objectives, you determine your own end goal. For some, it might be marrying and building a dynasty, for others it might be conquering enough of the game world, others might simply want to earn enough money and want to retire filthy rich. You can't really be just anyone you want in most RPGs, to an extent you have to be a warrior archetype who will have to fight. Even some of the games where you can theoretically not kill anyone, your Fallouts and Arcanums, you still have a set objective and can't really dick around and do your own thing for too long without progressing the story. These games don't have that problem, and it gives you a much more immersive experience when you're in control of the narrative, especially with mods that give you more options on what you can do and offer a guided questline on top of absolute freedom. This isn't for everyone, I know most people want the experience custom made for them and they simple play thru it, but in my older years I am appreciating games that give me options and let me play my way instead of more traditional linear games.
This is why I think if you want to get the most out of something like Kenshi, you have to play by it's strenghts, not it's weaker parts. Otherwise, you will have a legit claim, asking what's the point if the game is more or less just a tech demo...if you play it like a traditional RPG. The aim is for you to create a character you will live thru(more ridiculous the better in my experience, to truly test out how far the game mechanics will let you go) and get to work. Metagaming and just trying to complete every quest will get boring very quickly, this is why the game is an acquired taste.

I agree with some of what you say, but I have a counter argument: I can still hate normalfags simply because they are pitiful, retarded pests and them shoveling substanceless slop blindly is one of many reasons to despise them. It is one of the more easily visible ones, you don't need to be a philosopher to find a man eating his own shit disgusting. Likewise, with how easy it is to play older, better games, between the likes of Steam/GOG, piracy and various ports and remasters on consoles, not to mention the ease of emulation, you have to a truly subhuman, deadbrain creature to play modern day slop, especially the kind that you don't even own by definition. The fact that some people spend as much as a hundred dollars on these games, if not more thanks to special editions and micro transactions, makes me sick, I wouldn't waste my time on most of this shit for free.

Precisely, we are always only as strong as our weakest link, and having that link be delusional, downright self destructive morons that barely have the IQ above the cutoff point for mental retardation, only hurts everyone else in the process. This is why "civilized" society will inevitably collapse eventually, probably soon, but in the field of videogames, this also explains why we are where we are today with AAA, or rather AAAA gaming. Those who engage with it must be named and shamed, if they are normalfags who couldn't care less, fine, but if they try to brand themselves as some sort of fans or "real gamers", they need to be gatekept as far away from the actual fandom or hobbyists as much as possible. As you said, these pests are rot itself and allowing even a few of them into your communities spells death.
