Harems are still a thing but they are more subtle now and it's not really a genre in itself anymore. I guess the battle harems spam of the 2000s and early 2010s turned people off from the genre or just that unoriginal studios and publishing corporations just switched their focus from battle harem to isekai as their low-risk genre of choice. That being said, battle harem do feel like a genre more teenagers high on puberty would prefer while those shitty slow-life isekai cater to them as they grow older and become disillusioned by the Japanese salaryman life. So perhaps the audience just changed and it impacted the industry.
>top 10 cliches
Dense as fuck MC is the single biggest one.
Weak unworthy MC is another one but is not always there.
All the girls have different and clear archetypes.
The famous 'fall down and grope tits' or 'girl fall down and put her ass on my face' scenes.
Those are the ones that come to mind right now, but last one might just be an ecchi cliche more than anything else.

>Do visual novels with multiple girls count as a harem despite you picking a girl in the end
Not if there is no multiple girl ending or something that involve romantic relationship with multiple girls at once during the common route. Having many girls open to you at once is just a love triangle/polygon type of situation. The lines blurs at some point.
